Quick & Easy Chicken Tikka Masala (The 30-Minute Version)

Ingredients
1.5 lbs chicken breast, cut into 1-inch pieces
1 large onion, finely chopped
3 cloves garlic, minced
1 inch ginger, grated
1 (15 oz) can crushed tomatoes
1 cup heavy cream or full-fat yogurt
2 tbsp vegetable oil
Spices: 2 tsp garam masala, 1 tsp turmeric, 1 tsp cumin, 1 tsp paprika, 1/2 tsp cayenne pepper (optional)
Salt and pepper to taste
Fresh cilantro, for garnish
Instructions
Marinate (Optional but Recommended): Toss chicken pieces with 1/2 tsp salt, 1/2 tsp turmeric, and 1/2 tsp garam masala. Set aside while you prepare the sauce.
Sauté Aromatics: Heat oil in a large skillet or pot over medium heat. Add the chopped onion and sauté until softened (about 5 minutes). Add the garlic and ginger and cook for 1 minute until fragrant.
Bloom Spices: Add the remaining garam masala, turmeric, cumin, paprika, and cayenne (if using). Stir constantly for 30 seconds. This step is crucial for deep flavor.
Simmer Sauce: Pour in the crushed tomatoes and bring the mixture to a simmer. Cook for 5–7 minutes, allowing the sauce to thicken slightly. Season generously with salt and pepper.
Add Chicken: Stir the marinated chicken pieces into the sauce. Cover the pot and let it simmer for 10–12 minutes, or until the chicken is cooked through.
Finish: Reduce the heat to low. Stir in the heavy cream or yogurt until the sauce is creamy and uniform. Garnish with fresh cilantro and serve hot over rice.
